Barszcz
Description
Barszcz is a sour soup, made with meat stock, vegetables and seasonings, common in Eastern Europe and Northern Asia.
In English, the word borscht is most often associated with the soup's variant of Ukrainian origin, made with red beetroots as one of the main ingredients, which give the dish its distinctive red color.
Ingredients
- 500 g of beetroots, peeled and grated
- 1 large carrot, peeled and grated
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 potato, peeled and diced
- 1/4 cabbage, shredded
- 1.5 liters of beef or vegetable stock
- 2 tablespoons of tomato paste
- 2 tablespoons of vinegar or lemon juice
- Salt and pepper to taste
- Fresh dill, for garnish
- Sour cream, for serving
Steps
- In a large pot, heat some oil and sauté the onion, garlic, and grated carrot until soft.
- Add the grated beetroots and cook for a few more minutes until they release their color.
- Stir in the tomato paste and cook for another minute.
- Pour in the beef or vegetable stock and bring to a boil.
- Add the diced potatoes and shredded cabbage, reduce the heat, and simmer for 20-25 minutes until the vegetables are tender.
- Season the soup with salt, pepper, and vinegar or lemon juice for a tangy flavor.
- Serve the barszcz hot, garnished with fresh dill and a dollop of sour cream on top.
